i’m all about light lunches, you know? and though i love to eat, sometimes stopping at lunch time and eat properly is a bit hard. i guess that is one of the issues when you work from home! and when you do love what you do, you’re so involved that stopping is not always what you want to do, but then you get hungry, so you really need to stop! and yesterday, i got to prepare a delicious salad with some of my very favourite ingredients! and i thought i could share here! do you enjoy salads?
i shall call this spring salmon salad and that should give you the clue about what was the main ingredient – salmon! i love salmon in every way and it’s definitely one of the most common fish around our house. i particularly enjoy having smoked salmon, because it’s so light and perfect to go with sandwiches, salads, pasta… it makes the meal lighter. so and what about the other ingredients?

smoked salmon
mixture of salad
rucola
ricotta cheese
cherry tomatoes
muchrooms
sliced bacon
garlic
olive oil
balsamic vinegar
how to cook this?
extremely easy! chop the mushrooms, tomatoes, ricotta cheese and slice the salmon in very small pieces. use a bowl to mix all the ingredients, except the mushrooms and the bacon. use a small frying pan with some olive oil and let the mushrooms and bacon cook for a few minutes, until they look a bit golden and soft. then add them to the salad, and drop another bit of olive oil and balsamic vinegar, along with some chopped garlic. mix everything together and you’re good to go!
and another issue on working from home and having lunch alone is setting the table for yourself. is it all worth it? why can’t i just eat here over my laptop and get it over with it? well, the main reason is because you need to stop working for a while and eat properly, which also means to chew properly and actually enjoying your meal. so, set yourself a beautiful table, read a magazine, or listen to some music… or just be in the silence, which is my main option.

and no, it was not sunny outside, it was actually pretty gloomy and later in the afternoon it started to rain and some thunders came as well! but it’s so simple to create a simple set for your meal, a candle may be too much for some of you, but it creates a different mood and we all need and enjoy a good comforting mood to have our meals!

This sounds lovely, I have never tried salad with salmon in. I think the only fish I’ve ever had in salad is tuna.
