hello there, how are you doing? did you wake up to a beautiful day or a rainy one like we did? i know that rain has been much needed this year, but raining on the weekends, instead of weekdays is just something really annoying! but let’s move on to another topic, food! today is the last friday of the month, so we have sylvie shirazi of gourmande in the kitchen with a round-up on recipes regarding a topic she chooses every month! so let’s hear it from sylvie now!
“each year i eagerly anticipate the end of the interminably long winter months. i wait patiently for the days to get longer and the air warmer. i look forward to the abundance of green at the market that comes with spring’s temperate weather and all the fresh bright flavors. when i think of springtime greens, spinach immediately comes to mind. this nutrient dense food is low in calories but packed with vitamins and minerals! its appearance in early spring makes this leafy green the perfect way to celebrate the beginning of the season. eaten raw in a salad, in a smoothie or lightly cooked in soups or main courses, here are 6 reasons why spinach should make its way into your grocery bags!”
harissa chickpeas with spinach: dinner in 15 from ashley of not without salt – dinner ready in 15 minutes? yes you can have dinner ready in fifteen minutes when you make these harissa chickpeas with spinach. according to ashley these chickpeas are spicy ones and the perfect complement to fresh spinach leaves. she tells us “with all the ingredients on hand this meal comes together in minutes but carries with it a hearty, warm spice thanks to harissa”.
spinach, ricotta and tomato calzones from katie of good life eats – add this spinach calzone recipe to your list of recipes to make and freeze. whether you make enough for the month or want a few stashed away for busy days, these spinach ricotta and tomato calzones fit the bill. a perfect, simple and wholesome meal from the freezer!
thin green spinach and herb omelettes | flourless crêpes from sylvie of gourmande in the kitchen – these are paper-thin omelettes, flecked with herbs that can double as gluten-free/grain-free crêpes and are incredibly quick to make. the whole process doesn’t take more than a few minutes and they can be filled with whatever vegetables or cheeses you have in your fridge. a small handful of aromatic herbs and spinach gives these omelettes their pale green hue and fresh flavor; i filled mine with a small handful of spinach leaves and crumbled goat cheese for a light lunch.
spinach, sundried tomatoes and feta frittata bites from sonia of the healthy foodie – sonia tell us “these little spinach and feta bites are just as delicious right out of the fridge as they are right out of the oven. which means [you] can make a whole batch on sunday and enjoy them for lunch at work all week, without even having to reheat them. think picnic, think pot luck, think brunch, lunch, quick snack, think breakfast on the go.”
spinach, tomato, and tortellini soup from stephanie of desserts for breakfast – stephanie tells us she made this tomato-y and brothy while traveling in italy and slurped it happily while sitting by a third-story window overlooking the winding, narrow trastevere alleyways below and reading a good book. if it’s still chilly where you are, try making this easy and delicious pot of soup from fresh market ingredients, like spinach and tomatoes.
the green refresher from lisa of with style & grace – lisa talks about how the color green makes us feel, how it soothes us, relaxes us and offers a sense of renewal. and a glass of her green refresher does just that. don’t miss her 3 tips on juicing as well.
and this is it for today! and let me tell you that preparing this feature while having spinaches myself for lunch was quite an interesting thing to do! i mixed mine with green peas and tuna, on a wok with a little bit of olive oil and garlic. and when it was almost done, added a bit of cream and a few minutes later added two eggs on top of it, let them cook for 4 minutes and done!
