though i love to eat, and to cook, i am aware that i am far behind on being an actual cook, or something even similar! i cook everyday for me & mr twiggs, and there are days in which i cook two meals, lunch & dinner. as we like to save our money, i always manage to cook dinner that will be enough for 4 meals, two for dinner and two for next day’s lunch! sometimes, when that is not possible, i need to cook lunch for myself. this week i cooked something unexpected… just took what i had on the fridge, layered everything and after 10 minutes in the oven, i had lunch! a delicious one actually!
what is the recipe?

what are the ingredients?
serves 2 (or one, if this one eats well… like i do!)
1 small sliced eggplant
1 sliced tomato
5 slice goat cheese
6 slices bacon
olive oil
pepper
lemon juice
how do we cook it?
start by placing the bacon slices on the plate (leave two behind), then eggplant, tomato, cheese, by layers. then spread a little black pepper freshly ground. add the last slices of bacon, and finish with olive oil and lemon juice all over the plate. take this to the oven, medium temperature, until the cheese is melted and bacon a little roasted.
i did not place the bacon on top, because i did not have more bacon, but i will use it next time! as we tend to use little salt or any salt whatsoever, bacon will add the extra flavour! other than that, i also used the rest of the tomato and chopped it, spreading around the plate.
and out of the oven, the meal is ready! the olive oil and lemon juice are perfect together, along with the black pepper, because i always find eggplant a little tasteless, so these will do the trick! i enjoy these recipes very much, because i tend to fail in buying the ingredients for certain recipes. i always end up a bit confused when i am on the market, and bring everything that i usually eat. so this was easy for me! and as i like to avoid eating rice, pasta or potatoes in every meal, this was perfect… and so light!
