hello there friends! how are you? it’s friday!!! yay! tell me, what are your plans for the weekend? anything really good or just plain relax? i will be at a birthday dinner and will be the photographer, and as this will take place on the beach… happy me! well, but today i wanted to share with you a recipe for something simple, fresh and colourful! i did this last weekend, we stayed in lisbon and it was quite rainy on saturday. those weekend days perfect to be at… home! so, as usual, we had a late breakfast, but not a brunch… which means that by 3pm we were hungry! as i had nothing ready to eat i prepared something really simple… and in 10 minutes!
what is the recipe?

what are the ingredients?
couscous
green-peas
tomato
lemon juice
pepper
cilantro
how do we cook it?
fill with water a large boiling pot and once the water reaches a boil, add the green peas and let them cook until they are soft and juicy! on a frying pan add some water (according to the amount of couscous you are preparing), add two soup spoons of olive oil and let that water boil. as soon as it boils, turn off the stove and add the couscous. with a fork stir the couscous… and let it be still for 4 minutes. after those 4 minutes, turn on the stove again and stir for about 3 minutes… until it is fully cooked. dice a tomato and place it on a bowl… add the couscous and stir. then add the tomato and stir everything together.
add a bit of lemon juice and fresh pepper and stir the green peas with the couscous and tomato.
add a bit of chopped cilantro and you are done! you have yourself a vegetarian salad… fresh and colourful! perfect for a light weekend meal!
