hello hello fellow friends? how was your thanksgiving dinner? i truly hope you had a pleasant & joyful time together with your family, giving thanks to all the good things that are making your life sweeter. sometimes there are hard moments and we cannot see clearly… and those good things/family/friends are not always obvious in our hardest moments. but they are there. and they keep our heart warmer, in good moments… and in the not so good. so, this day… is to thank to all the good & the sweet that is present in our lives.
and to make our lives even sweeter, i will bring you… cupcakes! what could be better?
today these cupcakes are brought from sweet éadaoin, an irish lady that owns the sweet journal called {the city of the black birds}.

so, let us proceed… to the sweet thing in éadaoin’s company. cupcakes!
what is the recipe?
vanilla cupcakes.
ingredients:
120g plain flour
140g caster sugar
1 1/2 teaspoons baking powder
a pinch of salt
40g unsalted butter
120ml milk
1 egg
1/4 teaspoon vanilla extract
how do we bake it?
preheat the oven to 170 degrees celcius (gas 3) and line your cupcake tray with cases.

mix the flour, sugar, baking powder, salt and butter together in a bowl until they are all combined.
gradually mix in half the milk and beat until they are well combined.
in a separate bowl mix together the egg, vanilla extract and remaining milk, then add this into the flour mixture.
continue to mix until everything is quite smooth. spoon the mixture into the cases so that they are about two thirds full.
bake in the oven for about 20 – 25 minutes or until they are light golden in colour and a skewer inserted in the centre comes out clean.
leave them to cool on a wire rack before icing.
ingredients for icing:
250g icing sugar, sifted
80g unsalted butter
25ml milk
a couple of drops of vanilla extract
food colouring (whatever colours you would like)
how do we bake it?
beat the icing sugar and butter together until they are well combined.
add in the milk and vanilla extract and continue beating until the mixture is light and fluffy. if you are adding food colouring mix a drop in at this point before icing your cupcakes.
and now are almost ready to be eaten… but just before a nice coloured photo session…
